Making Herbal Vinegars

It’s a wonderful time of year to make herbal vinegars. They’re super simple to make, and wonderful to have on hand for homemade salad dressings, and marinades. You can use most of the culinary herbs by themselves to make a wonderful herbal vinegar, but you can also combine a few for even better flavors.

Some of my favorite herbal vinegar combinations include:

  • Oregano and basil make a wonderful savory combination
  • Make a lemon vinegar by combining lemon balm, lemon basil, lemon verbena, and/or lemon thyme.
  • Rosemary, dill and garlic
  • Give it a balsamic flavor with shallots, basil, and thyme
  • If you have a favorite herbal combination, try it as a vinegar.

To make herbal wash your herbs well, then crush them up and add them to warm vinegar. Close the jar and let it stand for several days. The herbs will infuse their flavor into the vinegar.

Some small flowers work great in herbal vinegars, and add a little color, here are a few you might try: clover, thyme, violets. You can experiment with other edible flowers to add some variety to your vinegars.
