Meal Makeover Moms Book Giveaway

For busy families who don’t want to compromise nutrition when it comes to meal time, the Meal Makeover Moms, Janice and Liz, have a cookbook book-cover-227x300with healthy recipes made just for you. The Mom’s Guide to Meal Makeovers includes strategies for incorporation nutritious ingredients and cooking tactics into hectic weeknights where it’s all too easy to fall back on fast food or other convenient options that aren’t nutritious at all.

Ultimately, healthy eating isn’t about quick solutions or easy fixes. So instead, the Meal Makeover Moms have developed simple strategies to encourage consistency and establish house rules for food.

Here is their recipe for Apple Cinnamon Muffins, reprinted with permission from The Mom’s Guide to Meal Makeovers. Here at Robust Cooking we are giving away a copy of this book to one lucky reader.

Apple Cinnamon Muffins
Makes 12 Muffins

Ingredients
1 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon, divided
1/2 teaspoon salt
2 large eggs, beaten
1 cup unsweetened applesauce
1/2 cup granulated sugar, reserve 1 tablespoon for the topping
1/3 cup canola oil
1/4 cup 1% lowfat milk
1 teaspoon vanilla extract
1 cup Mom’s Best Naturals Toasted Cinnamon Squares
1 small apple, unpeeled and cut into 1/4-inch dice (about 1 cup)
2 tablespoons ground flaxseed

Directions
1.  Preheat the oven to 350°F. Generously oil or coat 12 muffin cups with nonstick cooking spray and set aside.
2.  Whisk together the all-purpose flour, whole wheat flour, baking powder, 1/2 teaspoon cinnamon, and salt in a large bowl.
3.  Combine the eggs, applesauce, sugar, oil, milk, and vanilla in a medium bowl and stir until well blended.  Pour the liquid ingredients over the dry ingredients and stir until just moistened.
4. Meanwhile, prepare the topping by placing the cereal in a plastic, zip-top bag.  Crush into small pieces (about the size of lentils) with your fingers or a rolling pin.  Place the cereal, apple, flaxseed, remaining 1 tablespoon of sugar, and 1/2 teaspoon cinnamon in a bowl and stir to combine.
5.  Spoon the batter into the prepared muffin cups. Top evenly with the apple mixture, pressing down gently into the batter.
6.  Bake about 20 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean. Transfer the pan to a wire rack and cool for 5 minutes before removing.

Nutritional Information per Serving: 200 calories, 8g fat (1g saturated fat, 0.8g omega-3), 190mg sodium, 29g carbohydrate, 2g fiber, 4g protein

    The best tip I can offer is to let my husband do the baking – he’s a whiz with the oven. I cook, he bakes :)

    Sounds like a great book. My favorite muffin (currently) is a pumpkin apple muffin, which is really moist and really yummy.

    As for tips, I would advise (based only on my own experience) against (yes, against) using silicone muffin cups. Maybe it’s just the ones I have, but they’re too thick, and the muffin ends up sticking to the cup and they don’t unpeel very attractively.

  5. My favorite muffins are bananna nut. I love to mix a small block of cream cheese with an equal amount of lemon icing until its smooth and use as a cream center for them. i split each muffin in half and fill with icing cheese. yummy in my tummy.

    I love to add a struesel topping to the muffins I make. Blueberry are our favorite! I always keep blueberries on hand in the freezer for just this purpose.

    My favourite muffin is actually a majorly savourly one; that I haven’t had for years!

    They are muffins with bacon, cheese and I’m pretty sure were made with cream of mushroom soup……….grrr I’m going to have to hunt that recipe down now!

    Perfect Cookies Every Time — Using parchment paper to bake the cookies is easy, safe (and food-grade!), and is my favorite cookie-baking trick. Parchment paper allows you to be more precise in baking cookies, because you can remove them all from the pan at the same moment. Plus, you can make more cookies faster, which is never a bad thing.

    My favorite kind of muffin is chocolate chocolate chip! MMM. A quick cooking tip: since we’re on the topic of making over meals to be healthier, the first one that comes to mind is substituting apple sauce for oil in baked goods. Thanks so much for the giveaway, what fun!
