Meatloaf is one of those simple recipes that my family loves no matter how many times I make it. It’s also a great recipe to use when you need to be a bit more frugal, because a little bit of ground beef or meat goes a long way.

I’ve been happily trying various meatloaf recipes for several years, and have found some that are basic, while others that are filled with different flavors. A few I’ve even made for company when they came over. These are favorite recipes for meatloaf, be it the everyday kind or the special occasion.
Mrs. Kostyra’s Meatloaf
This is another fabulous Martha Stewart recipe, as “Mrs. Kostyra” is her mother. This is also the recipe I used most often, because it’s very versatile. It’s a great way to get some veggies in your family without them knowing, and you can also stretch a few pounds of ground beef. You could also use ground veal or pork, however.
This recipe also is a bit on the spicy side, so I would recommend cutting the pepper and garlic in half if you like it a little lighter. I like to make this using a jelly roll pan rather than a loaf pan, because it seems to come together a little better that way.
Asian Style Meatloaf
If you love Asian food, you will love this recipe. The hoisin sauce really gives it a nice touch.
Bacon Cheeseburger Meatloaf
This one is a take on the original, with more cheese, crunch, and southern influence.
Italian Meatloaf
Michael Chiarello is currently competing in the top chef masters round on Food Network, and I was browsing through his recipes one day and tried this one. I LOVED his Italian take on this dish. The flavors are fabulous.
Good Eats Meatloaf
This one is a bit cajun, a bit spicy. But can you ever go wrong with Alton Brown? He’s the best. This meatloaf will keep your family begging for more.
