Mint Chocolate Chip Cookies

I live down the street from a Great Harvest Bakery. I love their bread, but what I really loved was their Mint Chocolate Chip cookies. I stopped by the other day and they were out. In fact, not only were they out, but the friendly lady behind the counter told me that they are no longer making them. Ouch.
I left with a pumpkin chocolate chip muffin and a strong desire to figure out my own version of that cookie recipe.
Mint Chocolate Chip Cookies
Ingredients:
- *1 cup unsalted butter, 2 sticks
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon mint extract
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 3/4 Dutch-process Cocoa
- 2 cups flour
- 1 1/2 cups milk chocolate chips
Directions
- Preheat oven to 350 degrees.
- Cream butter with a hand mixer.
- Add sugar, both extracts, mix.
- Add eggs, mix.
- In a separate bowl, stir together salt, baking powder, cocoa, and flour.
- Add dry ingredients to butter/sugar mixture, mix.
- Stir in chocolate chips.
- Spoon onto parchment paper-lined baking ship – about 2 tablespoon-size balls, 2 inches apart.
- Bake for 12 minutes.
- Remove from baking sheet and cool.
Makes about 28-30 cookies
