Missing An Ingredient – Substitution List

Have you ever hit the kitchen, all fired up to make something special, only to discover that you were missing a few key ingredients?
Don’t worry, sometimes you might have to re-think a dish, but there are always substitutions.
I regularly make substitutions when I prepare pancakes or brownies. Buttermilk is not something I keep in the fridge, but add one tablespoon of vinegar to one cup of milk and I’m good to go. Brownies; I keep dutch cocoa around all the time so I can easily substitute 3 tablespoons of unsweetened cocoa powder mixed with 1 tablespoon oil for unsweetened baking chocolate.
For an expanded list of substitutions, take a look here. It’s located on the Vegetarian Times website, but the spice and vegetable substitutions would be helpful for any type of diet.
