Mmmmmm…. salad
As I’ve mentioned before, I have a big salad for lunch almost every day. It’s a great way to get a whole lot of veggies into my daily diet, in both quantity and variety. I never have the same salad twice.
This salad from the other day was so pretty I took a picture: mixed baby greens, yellow bell peppers, tomatoes, radishes, carrots, cucumber, and avocado. All fresh and completely delicious.

I have lots of veggies too but I also have chicken in it.
What can be used instead of chicken in salads if your’re a vegetarian?
Hi Haunted Tuna – good question. I usually add substance to my salads by including a high-protein food such as chick peas, toasted walnuts, grilled marinated tofu, Quorn, hard-boiled eggs, etc. The possibilities are endless!

Ohh.. I love roasted and salted chick peas! But is more of a snack than to be used in a salad.. Did u try them? Tastes like chips!

I’ve had those before – they are a good snack. I should make some!
