Mojito-Key Lime-Cilantro Chicken

I have a few leftover stalks of cilantro that would probably go bad in a few days so I decided to chop and add them up in a mojito-key lime-marinade I was making for the chicken. Check out the recipe below. It’s easy to make and it’s delicious.

INGREDIENTS :

  • 6-8 pieces of chicken (legs, thighs)
  • few stalks of cilantro, finely chopped
  • 1/4 cup of Captain Morgan’s Mojito drink
  • juice from 8 key limes
  • 2 tbsp olive oil
  • sprinkle of salt and pepper

Preheat the oven to 365°.

Combine chopped cilantro, Mojito, key lime juice, olive oil, salt and pepper in a bowl.

Place the chicken pieces on a container. Pour the marinade all over the chicken. Toss to coat the meat with the marinade. Cover then store in the fridge to marinate for at least 2-3 hours or overnight.

Bake the chicken in the oven for 40 to 45 minutes.
