Mommy Cooks? Making Mexican Jalapeno Cheese Dip and Homemade Tortilla Chips

Have you ever been to a Mexican restaurant and wished you could make their $4 cheese dip at home, for much less? Well, read on. This one is yummy!

Ingredients:
1/4 lb White American Cheese (in the deli)
1/2 C Heavy Whipping Cream
1/4 stick butter
1 can chopped jalepenos

Chop the cheese into small pieces. It usually comes sliced, so this is fairly easy to do.

Melt the butter over medium heat in a large saucepan, then saute the jalepenos in the butter. Add the cream and once warmed, add the cheese a little at a time. Voila, real mexican-restaurant-style cheese dip.

For chips take either homemade tortillas or storebought (we use wholewheat, look in refrigerated section) and cut into 6 pieces like a pizza. I let my kids do this with our pizza cutter. They fight over this task! Usually when we cook this I have one helping me with the cheese dip (ie adding ingredients and helping mommy stir) and the others are cutting tortilla chips. The younger one can always ‘decorate’ the dining room with a drawing of a Mexican flag if you are uncomfortable with him directly helping with other activities. Theme dinners are fun.

Place on a baking sheet (or two) and bake at 250F for 20 mins. Salt and enjoy!

Note: Oh, and all of this is great warmed-up again. To rewarm you can just toast the same chips to warm them up and add a little cream to the dip to make it creamy again.

    I went to a fancy Mexican restaurant yesterday and was oohing over their Queso dip.

    This looks so simple — and I love that it isn’t made with Velveeta. ;)
