My Entry in the Boobie Bake Off: Pink Ribbon Pumpkin Muffins

Remember when I posted about the Boobie Bake Off fellow blogger Marye was hosting at her website Baking Delights?

Well, to enter, you had to bake something PINK — really, that’s it, the rest of the rules focused on the logistics of the contest, posting and voting and all.

So I entered … and baked … and this is a photo of my creation!

Now we’ll just see if I win (doubtful, but I had loads of yummy fun in the process)!

Here’s the recipe for my soon-to-be award-winning Pink Ribbon Pumpkin Muffins!

  • 1 box of lemon cake mix (yes, I take that shortcut alot)

  • 1 15 ounce can of pumpkin
  • 1 generous teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of ground cloves
  • 1 can pink vanilla frosting
  • 1 container of pink decorator icing
  1. Preheat the oven to 350 degrees.

  2. Spray a 12 cup muffin pan with Pam Baking no-stick spray.
  3. Mix together, in a large bowl, all the ingredients listed above.
  4. Spoon mixture into prepared muffin pan.
  5. Bake for 20 – 25 minutes (until a toothpick inserted into the middle of a muffin comes out clean).
  6. Allow to cool.
  7. Frost … then ice.

Caveat: I adapted this from something I found on the internet.

I should have taken a picture of me and my kids enjoying them but we ate them up too quickly!

    PUMPKIN MUFFINS!! My favorite! Any now you combine them with Pink Ribbon adornment?!? You clever, clever lady you!! Hugs to you, Karen! I’m going to bake these later in the week. I’ll let you know how they turn out. :-)
