Old Style Buttermilk Biscuits

  

This week the Today Show had Georgia Chef and co-author of  The Gift of Southern Cooking cookbook, Scott Peacock provide his best recipe and helpful hints for the perfect, homemade, southern style buttermilk biscuits.

A couple of key tips are to use one of the standards in most Southern kitchens, White Lily Flour and along with another Southern staple, lard.  Yes, I said lard.

So, what are the secrets to a great southern-style biscuit?  One is a great Southern soft flour (like White Lily), homemade baking powder–which is just cream of tartar and and baking soda sifted several times–,fresh, very cold lard and fresh, very cold buttermilk.  Purchase lard that is fresh and well-stored.  It should be stored in the refrigerator section at the store and don’t buy dusty old packages.

According to Scott, making tasty old school biscuits only takes a small amount of prep work, a bit of time in the oven and you then have tasty homemade biscuits.
