This is a bad recipe because you are supposed to soak the noodles in cold water until they are pliable not cook them in water with other ingredients. This is why your pad thai is mushy... Soak the noodles in cold water overnight, then when you're ready to make pad thai rinse the noodles by pouring them onto a collander. Put oil onto the wok and let it heat up then throw in the noodles and the ingredients thereafter. Mix the ingredients completely before the noodles start to cook. Then allow the noodles to cook and each 30 seconds flip and spread, don't keep mixing it because you don't want the noodles to break a lot. Do not add water!! Taste a piece of noodles, if it is perfect to your liking then dish it, if not then put a lid over it, the steam will soften the noodles... happy pad thai cooking :)

It's probably a good idea to only soak the noodles until they're firm rather than completely soft and then immerse them in cold or even icy water when you're done too.

Thanks, Gaga! Mine was mushy too. It just wasn't obvious in the photo. I think what ruined the noodles is that I mistakenly soaked them in close-to-boiling water. The packet said "hot" water only.
