Pattypan Squash in Salads

I was recently given several pattypan (or sunburst) squash. They’re white or yellow, but these scalloped summer squash may also be green.

Pattypan squash have a mild, buttery flavor, making them suitable to be used raw in salads. Just slice thinly and toss them in. If you dislike cucumbers, these squash will give your salad a little extra crunch.
Another thing you can do with pattypan squash is stuff them. They’ll look beautiful on the plate, and will probably impress guests. A stuffed pattypan squash recipe is available at allrecipes.com.

We grow the scalloped squash in our garden, and one of our favorite methods of cooking them is such a cinch to try. Simply cube the squash and sprinkle with Garlic Salt and bake @350 degrees until half done. You can flip it over during the cooking process for a golden brown on both sides if you like. It is a great guilt free snack that is quite filling.
