Pumpkin: not just for Halloween and pies

IMG 4203I love it when the fall produce starts rolling into the market. So many delicious vegetables come along with the cooler weather (which I also happen to love). This adorable little pumpkin (labeled as a “small halloween” at my local store) caught my eye the other day, so home it came. Tonight’s dinner featured oven roasted pumpkin based loosely on this tasty roast recipe from repicezaar.com. You can see what it looked like in the photo below; the taste was pretty good, too. It cooked a little unevenly – I should have stirred up the contents a couple times while roasting – but otherwise it came out really well.

IMG 4207The star of the evening was the roasted pumpkin seeds, done plain with salt. These are so good, I wish there was a way to get my hands on fresh pumpkin seeds without having to deal with the whole pumpkin. I mean, I like the pumpkin, too, but I love the seeds.
