Salads shouldn’t be a difficult meal to prepare – nor do you have to deprive yourself with skimpy ingredients and a plate full of limp lettuce. Sure, this may not be the optimal time of year for many kinds of fresh produce. But you should do your best to make sure your budget will allow for some splurging on
imported fresh fruits and vegetables.
The following salad is easy to prepare, will fill you up, and surprise your tastebuds with the injection of crispy sweet apple slices. I recommend choosing a light vinaigrette in order to let the taste of the actual ingredients themselves shine through.
Fresh Salad with Apple Slices
Ingredients
Lettuce (splurge – get the bagged kind. Shh…I won’t tell anyone)
1/2 green pepper
1 stalk of celery
1/4 cucumber
1/4 can chickpeas
1 medium gala apple
Directions
Chop up all your ingredients, rinse the chickpeas and throw everything into one bowl. Add your dressing and you have a meal. All in less than 10 minutes!
