Quick and Healthy Summer Wraps and Sandwiches

Healthy summer sandwiches You can grab a quick sandwich for lunch or dinner, and still make it healthy. When I make a sandwich, I try to include as many vegetables, or fruits as possible. Sometimes I skip the meat and cheese all together.

Here are a couple of my favorite quick sandwich combinations. Some hold the meat others include a little chicken or dairy.

I uses these quick and easy combinations to make summer sandwiches, wraps, and pitas:

Apples, grapes, and mandarin oranges topped with a few walnuts, and raspberry vinaigrette, or lowfat vanilla yogurt. This makes a wonderful dessert wrap.

Avocado, cilantro, greens, and diced chicken.

Grilled tomato, peppers, and eggplant with fresh cilantro.

Shredded carrots, cucumbers, broccoli, and onions with a little oil and vinegar dressing.

Spinach, almond slices, turkey, drizzled with raspberry vinaigrette.

Fresh tomatoes, lettuce, onion, cucumber, and green peppers drizzled with a little of your favorite salad dressing.

A tofu scramble with mushrooms, onion, and green peppers.

Grilled carrots, yellow squash, and onion, with fresh mixed greens.

Use whole grain bread, or tortillas to complete your healthy sandwiches and wraps.
