Quick hummus suggestion: Thai red curry hummus

February 19, 2008 by Jul

Yesterday I was whipping up a batch of hummus (using my easy creative homemade hummus recipe) when the jar of Thai red curry paste in my refrigerator caught my eye. I plopped about a tablespoon of it into the food processor along with the other ingredients (canned chick peas, lemon juice, olive oil, paprika, black pepper, and garlic) and whipped up a brand new version of hummus.

My red curry hummus was heavenly on top of yesterday’s lunch salad of mixed greens, bell peppers, cucumbers, and tomatoes. I will definitely be making this again. Yum yum yum yum yum.

I thought I had tried just about everything mixed into hummus but, although I have a jar of red curry paste in my fridge, this never occured to me! I’m going to try it next time. Great idea.

I had some again today – definitely my new favorite kind of hummus.

  4. If I do that with green curry paste I will have the most happiest hubby in the world (he’d eat anything if it was in green curry, well anything vegan :) )
