Quick Lunch~ Black Bean Corn Avocado Wraps

I like to make quick easy lunches while I’m working, but I don’t like to rely on frozen dinners, or boxed meals. I like to make something fresher if I can. One of my favorite things to do for lunch is to take a flour tortilla and make a wrap with whatever I have on hand.
Here’s how today’s wrap turned out. I have the instructions here to make one, but you can just as easily make 5 or 10:

Black Bean Corn Avocado Wraps
- 1/3 cup black beans (drained)
- 1 large flour tortilla (I picked up some jalapeno-cilantro flavored tortillas at the store they were yummy)
- 1/4 cup frozen corn
- 1 tsp onion
- 1/2 of an avocado (diced)
- 2 cherry tomatoes sliced in half, or a couple sections from a regular tomato
- a pinch of fresh cilantro
You could also add salsa or sour cream to this.
These are so easy to make:
- Combine the beans and corn and warm them in the microwave for about a minute, or until they’re heated through. I also heat my tortilla for about 15 seconds, just to warm it up.
- Layer all of the ingredients onto the flour tortilla and wrap it up.

This sounds very yummy. I just bought some organic white corn and black bean salsa by presidents choice and its great. Not too pricey either
