Quick Lunch~ Black Bean Corn Avocado Wraps

I like to make quick easy lunches while I’m working, but I don’t like to rely on frozen dinners, or boxed meals. I like to make something fresher if I can. One of my favorite things to do for lunch is to take a flour tortilla and make a wrap  with whatever I have on hand.

Here’s how today’s wrap turned out. I have the instructions here to make one, but you can just as easily make 5 or 10:

Black Bean Corn Avocado Wraps

  • 1/3 cup black beans (drained)
  • 1 large flour tortilla (I picked up some jalapeno-cilantro flavored tortillas at the store they were yummy)
  • 1/4 cup frozen corn
  • 1 tsp onion
  • 1/2 of an avocado (diced)
  • 2 cherry tomatoes sliced in half, or a couple sections from a regular tomato
  • a pinch of fresh cilantro

You could also add salsa or sour cream to this.

These are so easy to make:

  1. Combine the beans and corn and warm them in the microwave for about a minute, or until they’re heated through. I also heat my tortilla for about 15 seconds, just to warm it up.
  2. Layer all of the ingredients onto the flour tortilla and wrap it up.

    This sounds very yummy. I just bought some organic white corn and black bean salsa by presidents choice and its great. Not too pricey either
