I have a zillion quotations on art, but here are a few favorites:
Matisse once told the Hollywood film star Edward G. Robinson that the only thing that drove him to paint was the rising urge to strangle someone.
I can’t think much of a people who drew cats the same for four thousand years.
~Lord Kitchener on Egyptian art
A portrait is a painting with something wrong with the mouth.
~John Singer Sargent
It takes two to paint. One to paint, the other to stand by with an axe to kill him before he spoils it.
~William Merritt Chase
How important are the visual arts in our society? I feel strongly that the visual arts are of vast and incalculable importance. Of course I could be prejudiced. I am a visual art.
~Kermit the Frog
I perhaps owe having become a painter to flowers
~Claude Monet

I love, love, love the William Merritt Chase quote! One of my favorite quotes that I relate to art is from that great philosopher Calvin (of Calvin & Hobbs): “From now on, I’ll connect the dots my own way.”
