Rice pudding

Miro, my Slovakian friend cooked this rice pudding for me the other day.  It takes a little time, but the results were well worth it.  Here is how he did it.

boil 380g of rice in 1 litre of milk stirring continually until it is soft (the boring part)

mix in two pinches of salt then let it cool to room temperature

whip up 100g butter 110g fine sugar and 3 egg yolks to form a mouse add this to the rice

whip 3 egg whites then gently fold this into the rice

Grease and crumb a cake tin.  Add half of the rice mix, then a layer of tinned fruit like peaches, then the other half (reserve the juice from the tinned fruit)

Bake at 250 degrees Celsius for about 20 minutes until it is lightly golden.

Serve it up hot with a little juice dribbled on it. 

Eat one serving and try to stop yourself going back for seconds

    Sound great and easy to do. But I noticed u burned it a little but i think its delicious and healthy with milk on it.
