Salmon Cakes

If you want your family to get the Omega 3 fatty acids into their system, salmon cakes are a great alternative. It’s also cheap. I was watching the Melissa d’Arabian show the other day, and saw that she was making salmon cakes. At first, I was skeptical. Salmon out of a can? I wondered how good it could be.

Turns out, it was excellent. One thing I liked about this recipe was the fact that it used a baked potato to help create the cake. This add nice texture and also a satisfying flavor to the rest of the ingredients. These cakes were really easy to make. They use most things you have right in your pantry. All you have to do is get the canned salmon, which isn’t a bad thing to keep on hand. I added just a slightly less amount of lemon zest, but the great part about this recipe is that you can adjust to your own taste. If you like Dijon mustard, for example, you could always add a bit more. The recipe is very friendly to adjustments.
