Saturday Dinner on A Budget

We were in the habit of eating out or ordering in every weekend. Since I’ve been trying to watch our food budget a little closer, we’ve been doing more eating in on Saturday nights. The only problem is I don’t like to spend a ton of time cooking on Saturdays.

Earlier today while we were out I stopped at Kroger to get a few of their weekly bargains. I hit the deli at a good time and found some Italian bread marked down to .79 cents a loaf. Earlier this week I picked up shredded cheese for $1.49 a pack at our local Meijer store, and last week I got pizza sauce for .99 cents. For supper I combined those three bargains to make pizza.

It only took a few minutes to throw together. I sliced the bread down the center, then added the sauce, a dash of oregano, garlic, and basil, and cheese. I also added a little onion, and some yellow peppers I had in the freezer from my garden last summer.

I threw the pizza in the oven at 400` for about 12 minutes and it was done. Easy, and under $5.00 for the whole meal, even with a side salad (I found bag salad on sale for $1.29). That beats the usual Saturday $15-20 for take out, or pizza, and it was still easy and delicious.

Another tip to try – If you have some leftover English muffins or hamburger buns that are about to go bad, you can do the same thing. You can even let the kids make their own. They like having these little handheld pizzas.
