Smoked Salmon Spread

Cousin of mine makes a good smoked salmon spread. Great for special occasions and entertaining guests.

SMOKED SALMON SPREAD
14 oz. can wild Alaskan smoked salmon (optional smoked)
6 tablespoons mayonnaise
1 tablespoon minced onion
1 teaspoon dried dill weed
2 teaspoons lemon juice
1 teaspoon horseradish
1/4 cup celery
1/4 cup red bell pepper
salt & pepper
Mix mayonnaise, onion, dill, lemon juice and horseradish. Fold in salmon, celery and red bell pepper. Add more/less mayonnaise upon preference. Salt and pepper to taste.

Chill 3 hours before serving.

Serve with butter crackers.

Please note: Although the small bones and skin found in canned salmon have been processed to be so soft and will blend into other ingredients (the bones are a superb source of calcium), I remove the skin and bones.This is easy to do, just handle the salmon gently and remove them with a fork.
