Soba noodles

Another impulse buy at my local Asian grocery store the other day – Japanese soba noodles. I made my own dipping sauce out of soy sauce, rice wine, and vegetarian dashi. The noodles cooked very quickly, and then I rinsed them with cold water and served them cold. Easy and delicious.















Soba noodles are fantastic. I make a dipping sauce with shoyu soy sauce, brown rice vinegar, and sesame oil.
