Solo Cooking

My wife is overseas for a week and my kids are not interested in eating what I cook for myself (that is reasonable because I am not interested in what I cook for them either – boring for my three year old and mushy for my toothless one year old) so it is solo cooking again for me. 

I used to be accustomed to it, even like it, but now I find it frustrating and tedious.  I can never seem to muster up any creativity or real effort if it is just me eating.  All too quickly I think of easy options and try anything that fills my stomach without much effort.  To help me get through this week without resorting to leftover leftovers and cup noodle dinners I am going to publish my dinners every day.  It is my way of keeping myself honest.  If I am forced to publish what I eat every night then maybe I will have the pride enough to cook something decent.  We’ll see.

While I am at it, I’d love to hear what you cook for yourself when it is just you at home.  Any hints on One-Serve masterpieces would be greatly appreciated.   Thanks

    Things like fried rice and pizza can easily be scaled, especially if you make your own pizza dough. They’re some of my favorite “dinner for one” meals.
