South Beach Spice Bread Recipe

BreadToday I’d like to share a recipe I modified to make spice bread that I found over at Low Carb Friends. It’s made with a base of white beans and is Phase 1 friendly.

You need:
1 15oz. can of white (Northern) beans. Rinse and drain.
4 eggs (or egg beaters)
1 cup Davinci sugar-free Spice syrup or other flavored sugar-free syrup
1/4 cup dry milk (helps to make it rise)
2 tsp. baking powder
2 Tbsp. oil

Put all of the above ingredients in your food processor (a blender could work also) and blend until the mixture is liquid and thin (it only took about a minute in my food processor). Bake in a bread pan in the oven at 350 for 35-45 minutes.

When I made this, the bread was slightly moist coming out of the oven and I thought it wasn’t done, but after it sat out for awhile it firmed up nicely. Topped with some sugar-free whipped cream, it’s delicious!

    Oh that looks delicious. ‘Tis the season of guilty indulgence. It’s nice to have a few sane alternatives around.

    I believe I might need to make this for Thursday’s feast!
