Spanish?

I should admit here and now that I am about as Spanish as Jackie Chan, only maybe less so.  This recipe came not so much out of a Spanish cook book or even a distant memory of a Spanish holiday.  It sprouted more from looking at my Japanese fridge and wondering what I could cook that was extremely un-Japanese.  I landed on the idea of Spanish seafood and this is what occurred.

I fried some tiny Horse Mackerel fish in olive oil after cleaning and flouring them.  They went all gold and crispy with their tails and bones still intact.  I served these up on top of steamed spinach and Japanese rice with a quick sauce of tomatoes, mushrooms, green olives and onions.

It tasted great and it made me think of Spain but really it was nothing like it.  So I decided that I need to brush up on some Spanish cooking.  Please tell me your favourite Spanish cooking involving rice.  If it sounds good, and I can get the ingredients, I’ll try it out and write up the results here.

    i’m no blogger but a good cook. i always read your posts though have never left a comment. i’m spanish, living in spain. i could tell you hundreds of spanish dishes involving rice, if you’re interested, please email me and i’ll write some for you involving easy-to-find ingredients. it’d be a pleasure for me!

    Well, when talking Spain and rice, it’s got to be Spanish Rice and Paella (pronounced paw-ay-uh, or thereabout). I don’t know any Spanish fish recipes, but I know a few Latin American ones, which is Spanish…ish. Ever heard of Ceviche? It’s a perfect compromise between Spanish(ish) and Japanese flavors. It’s sour, tastes like the sea, and while not cooked it’s technically not raw (you use citric acid to chemically cook the meat).
