Spinach Stuffed Chicken Breasts

Tonight was a late one for dinner, but no worries – by just focusing on the main portion of the Spinach Stuffed Chicken Breasts, it was ready in no time. First – I made sure to call home when I was on my way so the spinach and chicken breasts were thawed out by the time I got home.
Then it was time to quickly combine the feta, mayo (I went for a light version and also used a little less than the recipe calls for so it didn’t drown out the feta – and to counterbalance the fact that the grocery store didn’t have turkey bacon, so the chicken was wrapped with a reduced sodium variety instead.![]()
Combine – Stuff – Wrap – in the oven. Make sure you keep an eye it, since although the recipe called for sixty minutes, I found at 45 minutes it was well on it’s way to done. The spinach and feta mixture won’t be able to offset dry chicken if you aren’t mindful of this meal.
While the stuffed chicken was cooking, I was mixing everything up for delicious banana crunch muffins. Don’t underestimate what can be done while a recipe that calls for over an hour (the majority of which isn’t hands on) is baking in the oven or simmering on the stove.
