Sunday Buffet – Ways to Use Leftover Ham

Easter dinner is over, the table has been cleaned up and I have a vast amount of leftover ham. Now I need some great leftover ham recipes. In fact, I need at least an entire ham’s worth, because three of us bought Easter hams and then decided to do a joint brunch. I was planning to use mine in yesterday’s Easter egg bake recipe, but discovered we needed some non-pork dishes, so…lots and lots of ham.

First up has to be ham soup. Yum. I could eat a good ham soup just about every day, couldn’t you? This version uses beans, which is my favorite type of ham soup, but there are also some delicious versions that use lentils.

This ham sandwich spread uses up another of those leftover hardboiled eggs, too. (Remember to avoid eating any eggs that have been sitting out for awhile.)

These mini sandwiches sound downright delicious. I think it is the cranberry relish that makes them sound so good.

If I wasn’t so full right now from Easter dinner, I do believe I’d whip up this ham and apple salad right now.

Still have leftover ham? Why not make yourself a nice ham, egg and cheese bagel for breakfast tomorrow? Browning a few ham slices in the skillet makes them really tasty. Or whip up your own cholesterol loaded mega fries and swap out ham cubes for the bacon the recipe calls for.
