Super Dirty Corn Dip for Super Bowl!

You must make this Dirty Corn Dip. I promise, you will not be disappointed. I got the recipe from my neighbor Jill, who had given me a little bowl of this dip along with some tortilla chips and a Mexican dinner that she had made for me just days after my son was born. Everything tasted wonderful, but the dip was a stand out. I demanded the recipe and have made it a dozen times since and it always gets rave reviews. I swear, once you start eating it, you can’t stop.

Super Bowl is a wonderful excuse to whip this up, too. I’m taking a bowl to Bobbie and Gary’s house on Sunday. They’re our neighbors. Gary played in the Super Bowl - in 1982 when he was with the Cincinnati Bengals. My husband tells me Gary also played in the coldest game in history, with temps well below zero. Living in the South, I cannot even fathom what that feels like. I haven’t even seen snow in years!

Anyway, this recipe makes a generous eight cups. If your crowd is small, just save the rest in the fridge for a few days. You might consider making this on Friday to serve with your Friday Fun Food Night tacos and saving the rest for Sunday’s Super Bowl party.

DIRTY CORN DIP

1 can Ro-Tel tomatoes, drained
16 ounces whipped cream cheese
1 cup chipotle salsa
(Don’t settle for anything except chipotle salsa. You can get chipotle and corn salsa or any combination thereof, but be sure chipotle is in there.)
¾ cup mayonnaise (Better use Hellman’s Real Mayonnaise original version and not the fat-free or light versions. I don’t care what you have on hand for sandwiches, just go buy the full-fledged Hellman’s and use it for recipes.)
2 cups finely shredded cheddar cheese
2 cans white niblet corn, drained
(For the life of me I cannot find “white niblet corn” at the grocery store. The yellow niblet corn is just too big and sweet, in my opinion. So I use the white shoepeg corn. But do what you want.)

Combine all ingredients and serve with corn chips or tortilla chips. Enjoy!

Oh, and for the gamblers in the crowd, you should know that my psychic son has predicted the Arizona Cardinals to win the Super Bowl. Watch and wait…
