The udon answer

The answer is in the little quail egg that is hiding at the back of the meal.  It is pretty difficult to crack a raw quail egg with out smashing it to bits and so the thoughtful restaurant gave me the perfect tool for the job.  A little  bit of overkill perhaps but better than a mouthful of shell.
