This Week’s Menu: Festive Sweets and Spice

As you may have noticed, Thanksgiving is a big deal for Kori and me. So this week, much of the focus is on the big day…Thursday, November 27th. But, that doesn’t mean Monday through Wednesday won’t be delicious too! Just that we’ll be keeping things a little lighter and holding off on any hearty pasta dishes so that by Thursday we’re prepared for the feast at hand.
Monday
Spinach Stuffed Chicken with Broccoli and Wild Rice – replace the fattier pork bacon with turkey bacon to trim this recipe down.
Tuesday
Broiled Tilapia Parmesan with Sauteed Asparagus – incorporate light mayo and be a little more conservative with the butter for this meal.
Wednesday
Vegetarian Enchiladas – choose a lighter Monterey Jack and sprinkle slightly less on top of the enchiladas.
Thursday – Thanksgiving!
I usually only dedicate 45 minutes or so to my dinner creations, so the recipe collection in this month’s Real Simple magazine has had me salivating for weeks…not only because it looks so delicious, but because they claim this can all be done in 3.5 hours. 3.5 hours. I’ll be putting it to the test…

Turkey and Curried Rice Casserole – I’ll have to pick up some ham separately for this recipe…or just leave it out all together and use more turkey (with only four of us attending, there should be plenty!).
