Tosca Reno’s New The Eat Clean Diet Cookbook Rocks!

I wrote about a cookbook a few months back, The Eat-Clean Cookbook by Tosca Reno. I really liked it as soon as I took a look inside. The recipes are very handy and easy, as well as diabetic friendly for the most part.
Well, Tosca just wrote a new cookbook… The Eat Clean Diet Cookbook. So it is the same great recipes, but with an even healthier approach. And yummy indeed. There are some very different suggestions in there, as well as leaner classic faves that totally hit the diabetic diet on the head. There is even a twist on the ol’ tuna fish sandwich. And it looks scrumptious…
White Bean Spread With Tuna
1 tbsp olive oil, 1 cup chopped Vidalia onion, 3 cloves garlic passed through a garlic press, 1 can of white beans of your choice- white kidney, pinto or navy, 2 tbsp lemon or lime juice, 2 tbsp of chopped fresh parsley or cilantro, 1 tsp fresh dill chopped, 8 oz. albacore tuna, sea salt and fresh ground pepper to taste.
Preparation- Heat oil in pan and saute onions until just translucent. Transfer pan contents to food processor and add remaining ingredients. Pulse until just blended for a chunky version. Serve over lettuce, in a lettuce wrap or on a whole wheat pita.
Per serving: 120 calories, 10g protein, 1og carb, 2g fiber, 1g sugar, 2g fat.
