V.C. Challenge day 4: Enoki and Pear
I was excited to find enoki mushrooms in the grocery store today. We had these long, skinny mushrooms on several occasions on our recent trip to Japan, and I was totally smitten with their taste and texture. I used these in some miso soup – added near the end so they would barely cook. Delicious!
The fruit of the day, pear, isn’t particularly rare or exotic, but pears are something I rarely ever buy, so I figured it counted for the purposes of my Veggie Chic Challenge. The two I bought were gigantic, but I can’t remember what variety they are. I poached one in a mixture of water, amaretto, maple syrup, whole cloves, and a cinnamon stick. It was delicious. The other one will get chopped up and dipped in dark chocolate fondue later this week. I know, not the healthiest way to ingest a fruit, but it sure does taste good…
