V.C. Challenge day 4: Enoki and Pear

IMG 6825I was excited to find enoki mushrooms in the grocery store today. We had these long, skinny mushrooms on several occasions on our recent trip to Japan, and I was totally smitten with their taste and texture. I used these in some miso soup – added near the end so they would barely cook. Delicious!

The fruit of the day, pear, isn’t particularly rare or exotic, but pears are something I rarely ever buy, so I figured it counted for the purposes of my Veggie Chic Challenge. The two I bought were gigantic, but I can’t remember what variety they are. I poached one in a mixture of water, amaretto, maple syrup, whole cloves, and a cinnamon stick. It was delicious. The other one will get chopped up and dipped in dark chocolate fondue later this week. I know, not the healthiest way to ingest a fruit, but it sure does taste good…
