Warm Up With Tomato & Herb Soup
I’m a huge fan of soup! Chicken noodle, cream of mushroom, butternut squash… I love them all! And now that the weather is getting colder, I have a bowl of soup, pretty much everyday for lunch. I’ve always got my eye out for a great soup recipe and this one was passed on to me by fellow Blisstree blogger, Marijke Durning. This delicious recipe sounds savory and satisfying. It would be great on it’s own as the main dish or a great side to a hearty roast beef sandwich. Its also very easy and open to interpretation so if you’d like to add anything to recipe (like chicken, which I am definitley going to do) then go right ahead!

Ingredients:
- 3 med. onions, peeled and chopped
- 50 g butter
- 3 cloves garlic minced
- 1 kg peeled tomatoes (You could peel or seed them. Up to you)
- 1bay leaf
- 1/2 tsp dried oregano
- bunch of parsley
- half a bunch of basil
- 1 tbsp tomato paste
- 1 tsp sugar
- 1.2 litres chicken stock or veggie stock
- salt and pepper
Procedure:
Chop parsley, melt butter, soften onions. Add tomatoes and heat through. Using a blender, blend the mixture. You don’t have to necessarily blend it so it’s creamy, just a bit to break up the big parts.
Return to the pot with two thirds of the fresh herbs and other remaining ingredients. Bring to a boil, simmer for about 45 minutes. Remove bay leaf. Serve hot or chilled with sour cream, chopped basil, parsely and chives.
