Warm Weather Prep

catfish and Cremant de LimouxOne night earlier this week, I prepared one of my best meals in a while.  Maybe it was the beer-battered catfish or the grapefruit, avocado, and goat cheese salad.  Or even a really yummy preparation of brussel sprouts (sauteed shallots, leaves, pistachios, and lemon juice).  All tied together with a bottle of Cremant de Limoux J. Laurens Brut.  I have to say I was too busy enjoying the food and surroundings to take too many notes.  All I wrote was light, citrus, minerals, sourdough bread…. But it was a tasty sparkling wine that I’ve had before and always enjoyed.  And at $11.99 at The Wine Mine, it is one that doesn’t put too much stress on the credit card.  Just the mood I’m looking for after a long day working in a warm winery.
