My pepper plants are in overdrive right now. I have tons of bell peppers, banana peppers, and a few hot peppers starting to come on. So what am I going to do with all those peppers?

- Freezing peppers is easy. I just cut the tops off, and take the seeds out, and throw them in freezer bags. Then later in the year I take them out a pepper at a time to use in stir fry, make southwest omelets, pizza, pepper poppers, or fajitas. They’re easy to slice while they’re still frozen, or run them under water for a few minutes to thaw them a little.

- You can also fire roast them on the grill, or over a fire to give them a smokey flavor. Then freeze them roasted, or serve them whole as a side for steak or chicken.
- Use them roasted or fresh to add to garden salsa.
- Make stuffed peppers.
- Slice them up and add them to a fresh garden salad.
- Make pepper jam.

I freeze my peppers in ziplock bags too. It’s so convenient later on to pull a pepper out of the freezer.
