What’s Your Favorite Summer Meal?

 summer vegetable mealsWhat’s your favorite straight from the garden summer meal? Mine’s corn on the cob, and tomato onion and lettuce sandwiches (sometimes I add some turkey bacon, or a burger to that, but not always).

I also love grilled squash, and eggplant. What about new potatoes, green beans and ham? Fresh spinach, or a salad straight from the garden? Yum!

This is the best time of the year to start a healthy cooking and eating program, with farmers markets overflowing with produce, and a vegetable stand on every corner you can’t use the excuse that produce is hard to find.

Most garden bounty is easy to prepare, and many fruits and vegetables can be eaten almost straight from the garden with little preparation, other than a quick wash. I love to grab a ripe tomato off the vine, wipe it on my shirt and munch it. How’s that for fast food?
