White Chocolate Chip Cookies

Before I give you the recipe, let me tell you a story. My nephew from Upstate NY is up here in NC to see my brother-in-law and his family. I found out at about noon today that we’re having a get together party. For 2 hours I couldn’t think of anything I could make for the party. It starts at 7pm. I knew that my dear sister-in-law will have all sorts of dips for chips and most probably finger foods. So I told my husband there is no point in making my own. He suggested potato salad. It’s not a BBQ party and the party sounded like a chips and dips kind of gathering so I doubt anybody would eat potato salad.

On the 3rd hour, I decided to make cookies. Who wouldn’t eat cookies? Especially white chocolate chip cookies.
INGREDIENTS
- 2 1/4 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 1 cup butter (2 sticks), room temperature
- 2 tsp vanilla
- 2/3 cup of brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 package of Nestle Tool House Premier White Morsels
In a bowl, mix together flour, baking powder, baking soda, salt then set aside.
Cream the butter, brown sugar, granulated sugar and vanilla. Add eggs one at a time, beating well. Gradually add the dry ingredients. Beat until the ingredients are thoroughly mixed. Stir in the white chocolate morsels.
Drop batter by teaspoonfuls onto the baking sheets; bake 10-12 minutes, 365F
Transfer the cookies to a wire rack to cool.
There you go. If all else fails, bring cookies, right? The cookies are ready to go and I even had time to blog about it

These are delicious! They came out big and flat (and thats because my tablespoons were a little oversized), but they’re chewy and perrrfect. Excellent recipe!
It was hard to find a white chocolate chip recipe that didnt have actual chocolate in it, and these hit the mark!
