My kitchen is finally back in order and there was never a better time to brush up on all the tools and equipment out there that I wish I could fit in this teeny tiny cooking space. Williams-Sonoma Tools & Techniques cookbook has proven to be more than just gorgeous photos (of which there are plenty) and a great way to endorse all the things Williams-Sonoma conveniently sells in their stores.
In addition to now knowing the proper way to rinse and dry brisket (run under cold water and make sure it’s completely dry) as well as shape a galette (egg wash must still be wet before you sprinkle sugar on the edges), I can now make better decisions about which pots and pans to use for certain recipes. Will I ever actually shape a galette? Probably not. But the option is there – and the amount of information about seemingly straightforward processes, like the proper way to cool a cake.
Now i just need to come up with a reason why I would ever sugar flower petals…
