It features 250 recipes including Bulgar Asparagus Salad(it’s Aspargus season, you know!), homemade Candied Nuts (a healthy snack treat), Almond and Curry Brocoli Stir-fry (Ooh, I can use locally grown almonds for this one!), and Dark Chocolate Pudding (I have to have chocolate at least once a day).
The book offers sections on getting to know herbs, common vegan cooking ingredients, and how to eat to support Healthy Body Systems.

I would love, love, love the cookbook! My favorite non meat meal is black-eyed pea salad and brown rice!
Barbequed tempeh definitely makes my top five!
My favorite is eggplant lasagna. Yummy!!!
I would LOVE this cookbook. I have never been a meat and potatoes type of person, so I’m always looking for new veggie meal ideas. If I had to pick just one, my fave meal sans meat is channa masala (chick peas and tomatoes in a spicy Indian curry sauce) atop couscous or brown rice. Delish.
I am a vegetarian, and I enjoy all my meals… But my favorite, homemade meal has to be spaghetti squash with homemade tomato sauce made from tomato paste, olives, green peas, cilantro, and broccoli~!
Recently I’ve been making spinach pesto with pasta because it’s the only vegetable dish my 4-year old likes (doesn’t eat meat either!). I’d love to try out some more vegetarian or vegan meals with this book…
I love corn and barley salad with a lime and cumin dressing. Perfect for the warm weather that has finally made an appearance here!
Veggie fried rice with tofu always makes my day!
I am new to the vegan scene and still building up my repertoire but my favorite is taco soup with black beans, corn, green chilies, tomatoes, avacadoes, lime and cilantro!
