Rooting For You

Root Still Life

We’ve had a little set back on the Eating the Alphabet Challenge.

I decided to substitute jackfruit for Jerusalem artichokes after a stressful mistranslation experience at the farmers’ market last Saturday (I now know that a Jerusalem artichokes are neither artichokes, nor from Jerusalem and are called Topinambur Knollen in German).

My son and I bought a can of green jackfruit together on Tuesday, but on Wednesday, he started telling me “I don’t want any jackfruit.”

Still, I tried taking it out of the cupboard to think about what to do with it and he’d put it back in another cupboard where I would have more difficulty finding it. This afternoon after work and kindergarten, we did find some Jerusalem artichokes and I will be making a root vegetable dish tomorrow using the ingredients from the still life above. My boy is so relieved he carefully drew pictures of both the Jerusalem artichokes and the yams in the little book we’ve been making about this adventure.

Has anyone been doing this with us?

hey, kate, next tie you do something food related, give me a holler! green jackfruit is really good stewed in coconut milk, with shrimp and hot chilies (as hot as your kid will eat it though, or not at all). garlic, onions, ginger, coconut milk, the chilies… the jackfruit. OR buy the ripe jackfruit (in cans, or fresh) — you can whirl that round in a blender, mix with milk and drink as a shake, or my kids’ favorite — jackfruit popsicles!!! or make jackfruit ice cream — MY favorite. or chop and wrap with banana (really ripe plantains are best, but regular bananas will do in a pinch) in a spring roll wrapper, sprinkle with a bit of brown sugar and deep fry — then you’ve got Filipino turon. like a spring roll, except sweet. and so yummy.

OOoh. Stef! It all sounds so delicious. I think I will make it stewed in coconut milk with shrimp and, perhaps, let my husband have some. I think it will be far too good for the kids.
