OOoh. Stef! It all sounds so delicious. I think I will make it stewed in coconut milk with shrimp and, perhaps, let my husband have some. I think it will be far too good for the kids.

hey, kate, next tie you do something food related, give me a holler! green jackfruit is really good stewed in coconut milk, with shrimp and hot chilies (as hot as your kid will eat it though, or not at all). garlic, onions, ginger, coconut milk, the chilies... the jackfruit. OR buy the ripe jackfruit (in cans, or fresh) -- you can whirl that round in a blender, mix with milk and drink as a shake, or my kids' favorite -- jackfruit popsicles!!! or make jackfruit ice cream -- MY favorite. or chop and wrap with banana (really ripe plantains are best, but regular bananas will do in a pinch) in a spring roll wrapper, sprinkle with a bit of brown sugar and deep fry -- then you've got Filipino turon. like a spring roll, except sweet. and so yummy.
