4 Years Ago/4 Years From Now….

In honor of leap year I am joining some of the other blogs at B5 to look back four years AND ahead four years!
Looking back at my menu plans for four years ago the most popular food on the menu was Cinnamon Pudding Cake. This is like a fudge pudding cake but sort of brown sugary and cinnamon-y. The cake makes it’s own sauce..absolutely delicious!
Cinnamon Pudding Cake
1 3/4 c brown sugar
2 tbs unsalted butter
2 tsp baking powder
2 1/2 tsp cinnamon
1 c sugar
1/2 tsp salt
1 1/2 c water
2 c flour
1 c milk
2 tbs butter
1/2 c chopped pecans
Combine brown sugar, water, and 2 tbs butter in saucepan. Bring to a boil and remove from heat. Mix flour, baking powder salt and cinnamon together and cut in remaining butter. Add milk. Spoon into a 9×9 inch pan. Sprinkle nuts over. Pour hot brown sugar mixture over and bake at 350 for 30 -35 minutes. Serve warm. 6 servings.
Now, the hard part…hmm…4 years from now… I will have (hopefully ) moved 2 of the older kids out..leaving me with a 16, 14, 13, 9 year olds. Hopefully my life will have settled a bit and I will get to experiment more with my baking. I have this recipe that I have never made and hope to by then, If I do, I am quite sure it will be my favorite. Caramel Mousse Napoleon, from Epicurious. Ever since I saw it the very first time…I was in love. Eventually I will do it..until then…well…we’ll see!

i love cinnamon. i need cinnamon. i think this cake will do nicely to satisfy that need. sounds great!

Four years? Pfeh, wait until 4 months fron now.
I don;t know, Julie, taking over the world takes time and effort…and I have laundry to do.
