4 1/2 cups old fashioned rolled oats
1/2 cup rice flour
1/4 cup quinoa flour
1/4 cup masa harina
1 tsp. baking soda
1 tsp. vanilla
2/3 cup organic Earth Balance; whipped buttery spread
1/2 cup honey
1/3 cup brown sugar
1 cup chocolate chips
small handful of sesame seeds
small handful of dried cranberries
small handful of raisins
Preheat the oven to 325 degrees. Grease a 9 x 13 pan.
Microwave the butter for a few seconds to soften. Whisk together the butter, honey, and brown sugar.
With your hands, and inn another, larger bowl, mix rolled oats, flours, masa harina, baking soda, and vanilla. Fold in butter/honey/sugar mixture with a spoon or spatula. Fold in chocolate chips, sesame seeds, dried cranberries, and raisins.
Press the mixture into the pan. Bake for 22 minutes. Let cool in the pan for 10 minutes before cutting. Let cool completely before serving.
This recipe needs improvement… it’s a little too sweet, and somewhat crumbly, though that may have been due to the fact that the kids were hungry and we didn’t wait for it to cool completely.
