American Pie Dough for Fruit Pies

2 1/2 cups all-purpose flour
1 tsp salt
2 tbsp sugar
12 tbsp unsalted butter; chilled and cut into 1/4 inch slices
8 tbsp chilled shortening
6 – 8 tbsp ice water

In a food processor with a steel blade, mix flour, salt, and sugar. Randomly scatter the butter pieces into the mixture, and make sure that they are coated by the flour mixture. Pulse five times for one second each. Scatter the shortening, and continue one-second pulsing until the mixture resembles coarse crumbs, with pieces no bigger than small-ish peas, stopping twice to scrape the mixture down the sides with a butter knife.

Pour/scrape the mixture into a bowl. Fold in 6 tbsp of ice water with a rubber spatula. Press until the dough sticks together. Add up to 2 more tbsp of water, if needed. (I stop at 7 tbsp total.) Divide dough in half, form into two balls and flatten into a 4-inch disk. Wrap in plastic wrap and refrigerate for at least half an hour (up to two days) before rolling out.
