Cherry Tomatoes

Just had to share this pic of roasted cherry tomatoes with you. Aren’t they gorgeous? And no, they haven’t been “touched up” — this was their natural color in natural light. Love that red!
These went under the salmon fillet pieces in the previous recipe, but you can use them to top crostini, or on a foccacia or pizza, or tossed with some salad greens. The possibilities are endless.

















They are indeed beautiful, Stef – as is the usual for your pictures.
I am feeling them on crostini with a little olive oil drizzle and some Parmesan. MMM
