Chocolate Almond Logs
I have been wanting to bake these for YEARS and I finally did it!!!! I got this recipe from Cookies! I kind of changed the shape a bit because the dough just did not want to be shaped into nice cylindrical logs. Haha.
1 cup sugar
1/2 cup + 1 tsp shortening
1/2 cup butter
1 egg
1 tsp almond extract
2 1/2 cups flour
1/2 cup unsweetened cocoa
1/2 tsp salt
1 cup vanilla chips
1 cup chopped almonds
Preheat the oven to 375 degrees.
In the bowl of an electric mixer, cream sugar, 1/2 cup shortening, and butter. Add the egg and almond extract. Beat until fluffy. Mix in flour, cocoa, and salt. Beat until the dough comes together.
Shape into 1/2″ x 1/2″ x 2 1/2″ rectangles. Place logs on an ungreased baking sheet, about 2 inches apart. Bake for 14 minutes. Cool completely on pans before transferring to a rack.
Position a glass, heat-proof bowl in a saucepan with water, so that the bottom of the bowl is not touching the water. Bring the water almost to a boil, then lower to simmer. Melt the chips and remaining teaspoon of shortening in the bowl. Dip the ends of the cookies into the white chocolate and sprinkle with the chopped almonds. Leave to dry completely on wax paper or rack.

i made these wonderful cookies a month ago: not too chocolateey, not too sweet, not too hard.. just soooooooooooooooo good!
