Baking Delights

Chocolate Wafers

1 1/2 cups flour
3/4 cup cocoa
1 1/4 tsp baking powder
1/8 tsp salt
1 1/4 cups sugar
3/4 cups softened butter (1 1/2 sticks)
1 tbsp rum
1 egg

Sift flour, cocoa powder, baking powder, and salt into a bowl and set aside.

At medium speed of an electric mixer, cream butter and sugar. Beat in rum and egg. At low speed, add the dry ingredients and mix until dough comes together. Turn out dough and wrap in plastic wrap. Refrigerate until the dough is stiff enough to work with.

Preheat the oven to 400 degrees. Between two sheets of wax paper or plastic wrap, roll the dough out to 1/8th inch thick and cut into circles using a two-inch round cookie cutter. Bake for 5 – 8 minutes on greased baking sheets.
