Cooking With Kids: S’mores Pancakes

There are going to be a few changes to Baking Delights in 2008. I am not fully ready to discuss them at the moment but one thing is that there will be a weekly post on cooking for kids.

As most of you know, I believe that cooking with your kids is one of the most important investments of time you can make. There is just something about it that unlocks their minds and their tongues. I don’t understand people who complain that their teens never talk to them..I have to generally run mine out of the kitchen with a hot spatula!Anyway…. This is not a breakfast for everyday. There is no way it could be considered nutritious or healthy. It is, however, wonderful. Save it for a snow day, or a gloomy day, or some day when someone needs to feel special. The kids can definitely help with these!

S’Mores Pancakes:

Pancake Batter:

2 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
5 tsp baking powder
2 eggs
1 1/2 cups milk
1 tsp vanilla
1/4 cup melted unsalted butter
1/2 cup milk chocolate chips
1/2 c coarsely crushed graham crackers
1/2 c mini marshmallows
In a bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk and oil; add to dry ingredients and mix well. Stir in chocolate chips, graham cracker, and marshmallows. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Marshmallows will tend to stick to griddle as the melt. Spray with cooking spray if needed.

Stack pancakes with butter, and additional marshmallows, graham crackers, and chocolate chips between layers. Dust with powdered sugar. Serves about 6.

  3. I feel so sad when I hear women mention that they didn’t know how to cook when they were grown because their mom didn’t want them messing up the kitchen. My mother let me do all the cooking I wanted…and make messes and experience failures, too. My daughter wanted to be in the midst of my cooking from her high chair. I even taught my 4-H group to cook when Beth was small. Just have the patience when they’re young and you can have many enjoyable times.

    MaryEmma- I was one of those that did not learn to cook until I was married and had a kitchen of my own..but I have made up for lost time!!

    Hi I have been scrolling, looking for a website that will direct me to where I can find a recipe for Chocolate Cookies from the 1950’s 4-H cook book. The recipe calls for cocoa. I have lost mine and it was always a favorite. Can anyone help me or at least direct me to where I can find it. Thank you so much.
