Baking Delights

Cream Cheese Brownies

I can’t remember when I first made these… but I’ve made them countless times since, and they’ve proved to be a major family favorite!!!

Base
2/3 cup flour
1/4 tsp salt
1/2 baking powder
2 oz. unsweetened chocolate
4 oz. bittersweet chocolate
8 tbsp butter
1 cup sugar
2 tsp vanilla
3 eggs

Filling
8 oz. cream cheese, room temp.
1/4 cup sugar
1/2 tsp vanilla
1 egg yolk

Preheat the oven to 325 degrees. Grease an 8-inch-square glass pyrex. Cut a piece of foil 16 x 8 and line the bottom and two sides of the pyrex so that the foil overhangs the edges. Grease the foil.

Whisk together flour, salt, and baking powder, and set aside.

In a 4-cup glass measuring cup, melt the chocolate and butter in the microwave. I do this by microwaving for 99 seconds, simply opening the door every 20 seconds to stir, instead of microwaving for 20 seconds and then stirring and having to set the time again. The chocolate does not have to be completely melted; you risk burning it. There is a certain point where it will continue to melt from its own heat, and you do not need to microwave it any longer. Usually after only 60 seconds total, it will have reached this point. Stir until fully melted.

Add sugar and vanilla. Add eggs, one at a time, making sure that each one is fully incorporated before adding the next. Whisk in dry ingredients.

In another bowl, combine filling ingredients and beat until the consistency is smooth.

Pour half of the base into the pyrex, followed by half the filling spread out, and then the other half of the base. The second half of the filling, drop randomly in big dollops. Swirl using a fork or knife or barbecue stick to create a marbled effect.

Bake 50 to 60 minutes, or until a barbecue stick inserted in the center comes out clean.

Cool brownies in the pan for at least 5 minutes before lifting out onto a wire rack and cooling completely before cutting.
